Tofu (豆腐 dòufu) is one of the most iconic foods in Chinese cuisine, with a history of more than 2,000 years.
It is traditionally traced back to the Western Han Dynasty (西汉 Xīhàn, 206 BC–9 AD) and is associated with Liu An (刘安 Liú Ān), the King of Huainan (淮南王 Huáinán Wáng).
According to legend, tofu was first created when soybeans were ground into liquid (soy milk 豆浆 dòujiāng) and then solidified using natural coagulants such as salt brine (盐卤 yánlǔ). Another version suggests it was discovered accidentally during alchemy experiments (炼丹 liàndān) when gypsum (石膏 shígāo) entered soy milk.
This accidental discovery later became one of the most influential foods in Chinese culinary history.
