Qian cuisine tastes numb and spicy, which are the two indispensable elements of Guizhou food. Numb refers to the seasoning made from several spices and the spicy is mainly made from red pepper. Sour Soup Fish

Sour soup fish is a kind of delicious food loved by people of various ethnic groups in Miao area. It is famous for its features of freshness, tenderness, fragrance and beauty. The sour soup of Miao people have fermented chili sour, tomato sour and rice soup sour and so on. When eating, you should dip in salt, pepper, Chinese prickly ash, wood ginger, onion, garlic and other mixed chili water or stir these ingredients with fish. The soup of sour soup fish is sour and spicy, delicious and tasty. People usually drink two bowls of sour soup before eating fish.

The Beef Rice Noodle(牛肉粉)

Beef rice noodle is popular all over Guizhou. People eat it for breakfast, lunch or dinner. Beef rice noodle is actually the rice noodles with a few pieces of beef, the soup is the key to the rice noodle, stewed soup needs a variety of raw materials and seasonings. According to personal preference, you can add chili, pickled cabbage, etc., when eating. You can eat it at street stalls or in restaurants.

Sticky Rice(糯米饭)

Sticky rice is one of the staple food for Miao people. The ingredient of "colorful rice", an important food of famous sister's meal festival in Taijiang, is glutinous rice. For Miao people, glutinous rice is also a kind of precious gift, when festival and important things, they will use the glutinous rice to make glutinous rice cake(Ci Ba in Chinese), Zongba(粽粑) and other sticky rice snacks. 

Niu Yang Bie(牛羊瘪)

Bie(瘪) is a special food of Dong minority. It is a mixture of undigested grass liquid and gastric juice in the stomachs of cattle, sheep and other animals, tasting a bit bitter. And it is used when cooking beef and mutton. Niu(cattle) Yang(sheep) Bie is common in Rongjiang and Liping. Tourists can give it a try, but if you have a taboo, tell the chef before ordering.
