Anshun Dining

Visitors to large and medium-sized cities in China will find many Guizhou restaurants. And some popular dishes which are considered part of Guizhou cuisine come from Anshun. Therefore, dining in Anshun plays an important role in the development of tourism. Different from Sichuan cuisine, Cantonese cuisine and other series, Anshun cuisine has unique flavor, spicy and sour are its main characteristics. What to Eat in Anshun

1. Preserved Meat and Blood Bean Curd(腊肉血豆腐)

This is an representative dish of Anshun. Preserved meat: Cut the fresh pork into certain shapes, then pickle with salt, cooking wine, Sichuan pepper and rock sugar. Smoked and roasted with pine branches. Blood tofu: mash fresh and tender tofu, add pig blood, mix well with seasoning and wrap with vegetable leaf. Smoked and roasted with pine branches. When eating, meat and bean curd cut into slices and steam.

2. Buckwheat Cool Bean Jelly(荞凉粉)

Buckwheat Cool Bean Jelly is made from the sweet buckwheat produced on Yunnan-Guizhou Plateau. It is usually served with fried soybeans or chili oil and preserved bean curd.

3. Chinese Yam(山药)

Yam has a long history of cultivation in Anshun. It contains abundant protein, amino acid, vitamin and starch. It has the functions of invigorating spleen, securing essence and tonifying lung and kidney. It is a good medicinal plant for treating diabetes mellitus.

4. Chongchong Cake(冲冲糕)

It is a traditional snack in Anshun. Chongchong cake is made of steamed glutinous rice, mixed with sesame, walnut kernel and wax gourd slices, etc.

5. Anshun Wrapped Roll(安顺裹卷)

Anshun wrapped roll is a famous snack in Anshun of Guizhou Province. It originated in the 1990s and now stores have been scattered all over Anshun. It has a variety of flavors, in Anshun, such snack can be found everywhere, children, the young and elderly all like it very much.

Other snacks and dishes include Buyi Chicken, Qingzhen (Islamic) Whole Ox Feast, Yelang Fish, Jianfen(剪粉), Jiuzhou spicy chicken(旧州鸡辣子), Posu Bun(破酥包子), Tofu ball(豆腐圆子), kabob, Anjiu(安酒), etc.
