  • Guangzhou Dining

A popular saying says that “All delicious food is in Guangzhou.”. Guangzhou delicacies are the main representatives of Cantonese Cuisine. Flavor features attach great importance to mouth-feel, so this kind of cuisine is famous for the taste of light, fresh, crispy, smooth, savory. Compared with other Chinese cuisines, these local dishes use few spicy dressings in order to keep from masking the original taste of the food. Besides Guangzhou morning tea and Guangzhou snacks are also worth tasting.

Guangzhou (广州) is the heartland of Cantonese cuisine (广府粤菜) and the city most closely associated with the Chinese saying “Eat in Guangzhou” (食在广州). Food here is not limited to famous dishes. It is a complete way of life built around morning tea, seasonal ingredients, carefully prepared soups, roast meats, handmade dim sum, neighbourhood dessert shops and family meals shared around a round table.

The city’s culinary traditions developed through centuries of maritime trade and contact with surrounding regions. Classic Cantonese cooking remains the foundation, while influences from Shunde (顺德), Chaoshan (潮汕), Hakka communities (客家地区), Hong Kong (香港), Macao (澳门) and international commercial culture have expanded Guangzhou’s dining landscape.

Today, travellers can begin with tea and dim sum in a historic Xiguan teahouse, sample noodles and desserts in an old residential street, enjoy contemporary Cantonese cuisine in Zhujiang New Town (珠江新城), and finish the day beside the Pearl River (珠江) with seafood or late-night snacks.

Guangzhou’s official catering development plans continue to promote traditional Cantonese food, old brands, food districts, evening dining and culinary tourism. Major areas under development include the Beijing Road Food District (北京路美食区), Canton Tower–Party Pier Food Cluster (广州塔—琶醍美食集聚区) and the southeastern part of Zhujiang New Town.

Independent restaurants may change their branches, opening hours or operating arrangements. Visitors should confirm the latest information before travelling across the city for a specific shop.

    Guangzhou Food Culture Overview

    The Cantonese Culinary System

Traditional Guangzhou food is valued for its freshness, balance, natural flavour and precise cooking methods. Cantonese chefs frequently use steaming, quick stir-frying, roasting, braising, double-boiling and slow simmering to preserve the texture and original character of each ingredient.

Three ideas are central to Guangzhou’s food culture:

Eating according to the season (不时不食) means selecting ingredients when they are naturally at their best. Spring menus feature fresh vegetables and light soups, summer meals favour cooling ingredients, autumn brings seafood and roasted dishes, and winter is associated with clay-pot rice, preserved meats and nourishing broths.

Food and medicine sharing the same origin (药食同源) can be seen in herbal tea, double-boiled soup, ginger desserts and the use of dates, goji berries, dried citrus peel and medicinal herbs in everyday cooking.

Transforming ordinary ingredients through refined technique (粗料精做) reflects the ability of Cantonese cooks to turn rice flour, offal, fish skin, vegetables or inexpensive cuts of meat into carefully balanced dishes.

    Morning Tea and Dim Sum

Yum cha (饮茶) is one of the most important social traditions in Guangzhou. Although the phrase literally means “drinking tea,” a typical morning-tea session includes baskets and plates of handmade dim sum shared by family members, friends or business partners.

    Common dishes include:

    • Shrimp dumplings (虾饺)
    • Siu mai (烧卖)
    • Steamed rice rolls (肠粉)
    • Barbecued pork buns (叉烧包)
    • Steamed chicken feet (蒸凤爪)
    • Turnip cake (萝卜糕)
    • Taro cake (芋头糕)
    • Egg tarts (蛋挞)
    • Custard buns (奶黄包)
    • Congee (粥)

Guangzhou’s official catering authorities recognise dim sum as a central component of Cantonese cuisine and continue to support traditional teahouses and historic brands such as Guangzhou Restaurant, Tao Tao Ju and Lian Xiang Lou.

    Culinary Heritage and Traditional Skills

Guangzhou’s culinary heritage covers seasonal food, pastry, roast meats, sauces, drinks and everyday street snacks.

    Representative traditions include:

    • Cantonese mooncake making (广式月饼制作技艺)
    • Cantonese dim sum making (广式点心制作技艺)
    • Cantonese cured-meat making (广式腊味制作技艺)
    • Cantonese condiment making (广式调味品制作技艺)

    Main Dining Experiences

Old-city neighbourhood dining is centred on Liwan (荔湾), Yuexiu (越秀) and parts of Haizhu (海珠). These areas are best for noodles, congee, rice rolls, sweet soups, offal dishes and small family restaurants.

Contemporary Cantonese dining is concentrated around Tianhe (天河), Zhujiang New Town, Taikoo Hui (太古汇), Parc Central (天环广场), Tianhe Road and major luxury hotels.

Rural and waterside dining is found in Panyu (番禺), Conghua (从化), Zengcheng (增城), Nansha (南沙) and Huadu (花都), where visitors can try farm chicken, freshwater fish, seasonal vegetables, seafood and regional agricultural products.

Night dining ranges from local noodle shops and open-fronted restaurants to organised commercial clusters such as Beijing Road, Party Pier, Taikoo Warehouse (太古仓), Zhujiang New Town and selected suburban dining streets.

    What to eat in Guanghzou

    Must-try Cantonese Dishes

    White Cut Chicken(白切鸡)

White Cut Chicken is an extremely simple but fresh dish in Cantonese cuisine. The plain chicken is boiled with no added spices or flavors for fifteen minutes. The trick is to use a local, organic chicken for its natural flavor. After it's done, peanut oil, ginger and scallions are added just to compliment the taste ever so slightly. Most of the flavor will be in the taugt skin.

    White Boiled Shrimp(白灼虾)

White boiled shrimp is a variety of night dish in Cantonese cuisine. The dish is made with shrimp in boiling (灼) hot water, and served with the shells. The shrimp is then eaten with soy sauce. When finished, people wash their hands in a bowl of warm tea and lemon.

A suckling pig is a piglet fed on its mother's milk (i.e., a piglet which is still a "suckling"). In culinary contexts, a suckling pig is slaughtered between the ages of two and six weeks. It is traditionally cooked whole, often roasted, in various cuisines. It is usually prepared for special occasions and gatherings.

    Clay Pot Rice(煲仔饭)

Clay Pot Rice is also a strongly featured Guangzhou food. The freshest seafood is odorless, and is best cooked by steaming. For instance, only a small amount of soy sauce, ginger, and spring onion is added to a steamed fish. The light seasoning is used only to bring out the natural sweetness of the seafood.
